This popular Jamacian fast food is said to be derived from either the Cornish pasty (due to the English invader influence) or from Haiti.
Wherever it came from it is distinctly Jamacian with it's jerk seasoning and tangy heat.
The traditional filling is beef but lamb, chicken, goat, oysters, beans and vegetables can all be 'pattied'. The jerk seasoning consists of : thyme, spring onions, scotch bonnet peppers and pimento (a.k.a. allspice - tastes like a mix of cinnamon, nutmeg and cloves).
The thin, firm, light, short pastry is turmeric yellow and spiced with curry and chilli powder.
Best eaten wandering around Carnival from a paper bag, a pattie also goes well with good old chips and baked beans.
